Hard boiled eggs are easy to prepare if you follow simple direction. Many cooks, homemakers, mothers go about boiling the eggs the wrong way and they don’t have a clue as to how to do it right.
I’m here to share the secret. You may have never considered looking in a cookbook under “hard boiled eggs” or “deviled eggs”. The secrete is not the age of the egg as you may have heard. The secrete is in the way you choose to boil your eggs. If you want a really easy egg to peel start your eggs in cold water and once they began to boil cover them and remove them from the heat source. Let them stand for 23 to 25 minutes and then fill the pan with tap water. Break the shells all around and let them cool even more in the tap water or began to peel them.
That’s it! Simple and easy and your eggs are done and ready to use in any recipe of your choice. For many years I struggled with peeling my hard boiled eggs and finally I read the cookbook. Eggs can’t be rushed, so don’t try or you will not have an easy time peeling them nor will they be hard boiled.

Of course you could ask experienced cooks and you may have gotten the same answers that I received. “Don’t use fresh eggs. They need to be older to boil and peel easily.” Rubbish! You just need to follow the tried and true method of the better cooks found in cookbooks.
